APPEARANCE
Garnet Red
NOSE
Beautiful aromatic intensity with classic notes of guarrigues, black olives, and violet, enirched by backberry aromas and a subtle touch of roasting
PALATE
Supple, expressive attack with present yet silky tannins. The palate charms with its roundness and balance, carried by a very delicate finish.

THE
TERROIR

Type of soil : A third of the Grenache comes from a clay-sandy soil and another third from rolled pebbles. The final third of the blend, Syrah, is grown on rolled pebbles.
Exposure : Gentle east facing slops.
Cultivated area: 1 ha.

VINIFICATION

Vinification : Low yields from old vines planted in 1964-1965 (25hl/ha). Careful plot selection. Extended cold pre-fermentation maceration, with gentle extraction by punch-down at the start of fermentation. Slow infusion, followed by light filtration at bottling.
Ageing : The Grenache is aged in demi-muids, while the Syrah matures for 16 months in 228liters Burgundy barrels. 12 months in concrete tank. 600 botlles, and 150 Magnum.

    DEGUSTATION
    APPEARANCE
    Ruby Red
    NOSE
    Crushed acerola cherry, fresh berries, hints of vanilla and licorice.
    PALATE
    Very balanced wine between a well-integrated tannic structure and a smooth roundness. Lots of elegance around a bouquet of fresh red fruit, accompanied by light notes of sweet spices. Ending by a long and pleasant finish.
    SERVICE TEMPERATURE

    FOOD PAIRING
    Osso Buco, roast lamb with Thyme, grilled summer vegetables.

    THE
    TERROIR

    Type of soil : Diversity of plot : Syrah et Grenache on sandy and clay soil around Les Saumades. Some old grenache from northern part of the Appellation.
    Exposure : East facing hills.
    Cultivated area: 2.5 ha.

    VINIFICATION

    Vinification : Small yields of 25 hl per hectare.
    Plot selection. Vinified in wooden tanks. Long maceration, extraction by soft grape-crushing at the beginning of fermentation. Light filtration at bottling.

    Ageing : 12 months in French aged oak barrels. 12 months in concrete tank. 8 000 botlles, 75 cl
