DEGUSTATION
APPEARANCE
Ruby Red
NOSE
Crushed acerola cherry, fresh berries, hints of vanilla and licorice.
PALATE
Very balanced wine between a well-integrated tannic structure and a smooth roundness. Lots of elegance around a bouquet of fresh red fruit, accompanied by light notes of sweet spices. Ending by a long and pleasant finish.

Osso Buco, roast lamb with Thyme, grilled summer vegetables.

THE
TERROIR

Type of soil : Diversity of plot : Syrah et Grenache on sandy and clay soil around Les Saumades. Some old grenache from northern part of the Appellation.
Exposure : East facing hills.
Cultivated area: 2.5 ha.

VINIFICATION

Vinification : Small yields of 25 hl per hectare.
Plot selection. Vinified in wooden tanks. Long maceration, extraction by soft grape-crushing at the beginning of fermentation. Light filtration at bottling.

Ageing : 12 months in French aged oak barrels. 12 months in concrete tank. 6 000 botlles, 75 cl

    DEGUSTATION
    APPEARANCE
    Red garnet
    NOSE
    Aromas of ripe black fruit, pepper, liquorice and cocoa powder.
    PALATE
    Full-bodied wine, the syrah brings a good structure, while the wood add a spicy touch of cinnamon. the wine is intense and sunny, it gives off aromas of very ripe black fruits, notes of tobacco and cedar. It finishes with a nice length in the mouth
    SERVICE TEMPERATURE

    Leg of lamb with rosemary, stuffed squid Camargue red rice, Braised pork, wild boar ragout

    Cultivated Area : 1 ha.
